Vegetarian Lentil Soup

I live in Sri Lanka.  It is hot. I still love soup.  I am just fortunate enough that I can turn my A C on and chow down.  Soup is a staple in my weekly meal planning.  It is easy, you can make it ahead and you can modify the ingredients based on what you have.

Chili is a favorite, taco soup too.  But one that I have recently discovered is a Vegetarian Lentil Soup.  

Lentils...where have you been?  Am I the only one who wasn't raised on Lentils?  They're so cheap... Gram is what they're called here...used in dal.  Anyway.  This Lentil soup is amazing. 

Here is what I do:
1 Large can of crushed tomatoes... the ones with basil are amazing. 
1 bag of lentils
2 cups of chicken broth
2 cloves of chopped garlic
1 small onion chopped
ANY VEG
The last time I made this, I used zucchini, okra (Lady Fingers is what they're called in Sri Lanka) carrots, and celery
It was so yummy and so filling. 
Put it all in the crock pot and walk away. 6 hours later you have an amazing dinner.
