It's hot here, y'all. I mean, Alabama in August hot. But you know what? It isn't going to get cooler anytime soon, so I'm just going to continue my little illusion that it really is fall and I decided to whip up a bowl of homemade chili. I love chili, I love it with ground beef, brisket, you name it, but here in Sri Lanka, beef is...different. So, we don't really have it often. And to be honest, we are chickened out. So that leaves a vegetarian option.
I made this recipe for me and the kids while Erik has been away. We all loved it, and of course I had to serve it with homemade cornbread!
Here is the recipe I used. The only changes were, I used no meat, increased the beans by 1 cup. Added celery... because
I had it, it adds flavor, I also used about half the cumin and chili powder because Sri Lankan spices are just so much better! It only takes a little bit. We gobbled it up, with the air on - of course. Oh - and
here is the cornbread recipe. I had to make mine in a loaf pan because I STILL HAVE NO COOKWARE! But, it was yummy. Hope you enjoy!
